2022 Champagne Pierre Paillard Bouzy Rouge 'Les Mignottes'. Champagne, France Fabio Gea 5 metres in depthLes Mignottes is an old vine pinot noir (planted in 1970) with ideal exposure on the south facing slopes of Bouzy. Grapes are harvested by hand from low yielding vines (35 hl hectares) and vinified following burgundian traditional principals: 15 days vatting period using native yeasts, 12 months in French oak barrels and not filtered or fined before bottling.
